Stories of Eco-Gastronomy

From Seoul to Oslo, Dili to Wroclaw, Mexico City to Dublin, the University of Gastronomic Sciences' professor-at-large, Dr. David Szanto, has encountered some remarkable people, places, and food. This talk will draw together some of these stories and themes, all within a network called eco-gastronomy.
The Eco-Gastronomy Project is an international knowledge-exchange initiative about food and food systems. The aim is to connect food visionaries around the world, building innovation, resilience, and justice, and based on an ecological-philosophical approach to food.
